Eat It – Funfetti Churros with Cream Cheese Frosting

A few months ago I tried my hand making churros for the first time for my mom’s birthday and they were SO GOOD! Little bits of fried dough coated in cinnamon and sugar? What is bad about that? Um, nothing. Nothing at all. But my philosophy of everything is better with a little color, also applies to food, so I whipped up a batch of funfetti churros with funfetti cream cheese frosting to dip them in and I was in heaven! Warm, fried dough heaven.

Funfetti Churros with Funfetti Cream Cheese Frosting

 For the Churros:
  • 1 cup of water
  • 2 Tbsp. Brown Sugar
  • 1/3 cup butter
  • 1 cup flour
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/2 cup rainbow jimmies
  • 1/4 cup sugar
  • 1/4 cup crushed rainbow jimmies
  • Oil for frying 
  • Pastry bag fitted with a start tip

For the Funfetti Cream Cheese Frosting:

  •  1 package whipped cream cheese spread
  •  1/4 cup powdered sugar
  • 2-3 TBSP rainbow jimmies

 Begin by heating your oil in a frying pan (at least 2-3 inchese deep) to 375°F. While the oil is heating up, place your water, brown sugar, and butter in a sauce pan and heat until the mixture just comes to a boil. Add your flour and mix until the dough forms a ball and pulls away from the sides of the pan. Remove from the heat and add the first egg and mix quickly until it is well incorporated, then add the next egg and mix until you have a soft dough. Add in your vanilla and 1/2 cup rainbow jimmies and stir to combine.

Now add your dough to the pastry bag and squeeze out long strands into the hot oil (use a pair of kitchen scissors to cut the dough to release it from the pastry bag if needed) and fry on both sides until golden brown. Remove the churros from the oil and drain on a piece of paper towel and then roll them in the sugar and crushed rainbow sprinkles mixture.

Once you have all your churros made, mix the cream cheese with the powdered sugar and sprinkles to make your frosting dip. Then serve while the churros are still nice and warm.

They are soft and warm on the inside with a crunchy fried dough exterior coated in crunchy sugar. And the cream cheese frosting is just the perfect bit of creamy that pairs so well with the warm churros. These are definite must make for your next fiesta!
