Eat It – Pumpkin Spice Choco Tacos

With fall only day’s away, I am officially in the bring on all things fall and halloween mood. But unfortunately the weather here in central Texas is not cooperating with my need for warm comfort foods and hot pumpkin spice latte’s. So I whipped together these pumpkin spice choco tacos so that I could get my fill of the the quintessential fall flavor in the 95 degree heat. And let me tell you, they sure did the trick! Pumpkin spice waffles filled with pumpkin spice ice cream and topped with caramel and white chocolate. Um, yum! And they are easier to put together than you might think!

Pumpkin Spice Choco Tacos

  • Pumpkin Spice frozen Eggo Waffles (or make your own!)
  • Pumpkin spice gelato or ice cream, half gallon will make 7-8 tacos (my local grocery had the most amazing pumpkin spice ice cream) 
  • White chocolate candy melts (1 bag)
  • Salted caramel sauce (1 jar)
Begin by heating your waffles until crisp in the toaster. Then when still warm, drape them over a wooden spoon handle to curve them into a taco shape. Once cool, stick them in the freezer for an hour. 
Remove the waffle tacos from the freezer and the ice cream, spoon the ice cream into the waffle tacos and place on a baking sheet and place in the freezer for a few hours until firm. 
Next, melt the white chocolate candy melts in the microwave for 30 seconds, stir and heat again. Repeat until the chocolate just melts. 
Remove the tacos from the freezer, dip top or just one end into the melted chocolate, place back on the tray and freeze again. Once fully frozen, individually wrap the tacos until you are ready to eat them. To serve, drizzle with the salted caramel sauce.
