Eat It – Semi Homemade Bunny Cannoli

I’ve got a quick and simple last minute Easter dessert idea for you today. Ever since I tried my first cannoli, I was hooked. That crunchy shell and creamy filling. Heaven! So today I will share how to turn one of my favorite desserts into a cute little bunny for Easter dessert.

 

Ingredients:

  • Cannoli Shells (I found these in the Italian section of my grocery store)
  • Mini Marshmallows
  • Heart Sprinkles
  • Pink Sanding sugar
  • Powdered sugar for dusting
  • Cannoli Cream recipe of your choice (I like to use a shortcut method of one brick of cream cheese softened and beaten with 1/3 cup of sugar and then folded in to 2 cups of cream, whipped to stiff peaks)
 
 
 
Cannoli shells can’t be filled to far in advance or they will get soggy, luckily you can make everything ahead of time and just leave the filling and details to the last minute.
 
To make the ears, cross cut a mini marshmallow in half and dip the sticky exposed part into the pink sugar to create the ears. 
 
Fill the cannoli with the cream from a piping bag fitted with a large 1A piping tip. 
 
 Add on your ears, little marshmallow bunny tail, heart nose, and a dusting of powdered sugar. Candy eyes are optional.
