Mix It – Lavender, Lemongrass, Lemonade Cocktail

filed under

Last year when we updated our curb appeal I planted a few lavender plants with the hope that eventually I would have fresh lavender to cook with and use in various craft projects. Not only does lavender grow really easily here, but it is pretty and fragrant too. Well, I didn’t have to wait too long, as one of my lavender plants started to bloom a few weeks ago. Now I have a few little buds to play around with. First up on my list of things to make was this lavender, lemongrass, lemonade cocktail.

Yum! This cocktail is so refreshing and has the perfect hints of spring. It is both floral and tart and oh so good! Surprisingly it isn’t as complicated as it sounds, and is really quite easy to make, so lets get started.

Lavender Lemongrass Simple Syrup

  • 1 Cup Water
  • 2 Cups Sugar
  • 4 Tbsp. Dried (or fresh if you have access) Lavender buds
  • 4 Tbsp. Dried (or fresh if you have access) Lemongrass

Begin by adding all the ingredients to a pot and warm until the sugar just melts. Reduce the heat and let simmer for 5 minutes. Remove from the heat and let cool, then strain out the lavender and lemongrass pieces. Feel free to add one drop of purple food coloring to the syrup for the tell-tale lavender color. Otherwise the simple syrup will be more of a brown color which doesn’t look as refreshing!

Now that you have your simple syrup, its time to mix your cocktail.

Lavender, Lemongrass, Lemonade Cocktail

  • 2 Ounces Lemon Vodka
  • 2 Ounces Fresh Lemon Juice
  • 2 Ounces Lavender Lemongrass Simple Syrup
  • Splash of Lemon Soda like La Croix

Combine the first three ingredients in a shaker with ice and shake for a about 30 seconds. Strain drink into a glass with ice and top with a splash of lemon soda. Feel free to garnish with a lemon wedge or piece of fresh lavender or lemongrass.

The lavender flavor is light and refreshing and the lemon and lemongrass give the cocktail and nice tartness. You definitely need to try this drink!

And if alcohol isn’t your thing, simply replace the vodka with more lemon soda for a perfect drink anytime. My kids loved the non-alcoholic version! And you will too. Promise!
