Eat It - Black Bean, Corn, and Avocado Salsa

I first tasted this take on salsa 6 or 7 years ago, and I just loved it! It is a definite summer must for me. Just this, a bag of thick tortilla chips, and a salty frozen margarita are the perfect way to end a summer day. The great thing (aside from the fact that it tastes amazing and is super healthy) is that it is super easy to make. It really only takes chopping up the veggies, so why not make some this weekend and invite some friends over to hang?

You will need the following cut into bite sized pieces (or small enough that you can fit several different veggies on one chip):
purple onion, frozen corn, avocado, tomato (mine is an orange one from my garden), cilantro, Bell pepper (I went with red so that I had every color represented, but whatever color you have will work, or even more than one color), and a can of black beans drained and rinsed. The quantities of each that you use are really up to you. I usually use equal parts of each (except for the cilantro), but you be the judge. Like more beans? Then add them! More tomato? Do that! There are no rules here!

Once you have all of your ingredients ready, mix them in a bowl and add the juice of one or two limes to taste and then a liberal sprinkle of Tony Chachere's over the top and mix well. Feel free to add more Tony Chachere's or a mix of salt, pepper, and chili powder to taste.

Seriously. This salsa is the sh*t. And now here I go craving some more. I guess it is time to make up a new batch! Have a great weekend Y'all!
