Bake It – Oatmeal Chocolate Chip Cookies

Yesterday I showed you how to make a fun faux macaron cookie ring, but today I am going to give you a recipe for some real cookies. I made these oatmeal chocolate chip cookies for a little get together with friends this past weekend and they were a hit, so I figured I would share the recipe with you. I know that there are a ton of recipes for cookies like this out there, but these were seriously good. Just look at that chewy, chocolatey deliciousness.

Oatmeal Chocolate Chip Cookies

1 stick of unsalted butter softened
6 Tbsp. vegetable shortening
2 eggs
1 1/8 cup sugar
1/8 cup molasses
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp salt
1 1/2 cups flour
3 cups quick cooking oats
half a package of chocolate chips (or more if you want them super chocolatey)

Preheat the oven to 350F. Cream the butter, shortening, sugar, and molasses in a bowl until light and creamy. Then add the eggs and vanilla and mix to incorporate. Next comes the flour, baking soda, and salt. After these are mixed well, go ahead and add the oats and chocolate chips and mix just to incorporate. Drop on the cookie sheet and bake appx. 8-10 minutes or until just golden around the edges. The middle will still look undercooked, but will continue to cook once out of the oven.

This under-baking along with the molasses and shortening will give you a super soft and chewy cookie which is my favorite. You can also swap the chocolate chips for raisins and 1 tsp. of cinnamon for a traditional oatmeal raisin cookie if you wish. Now go bake some of your own and let me know how they turn out.
