Cucumber Agua Fresca

My cucumbers are coming in fast, too fast to eat them all, but I don’t want to waste them. So today I made a delicious cucumber agua fresca with some of my cucumbers. It was light, tasty, and very cucumbery. Overall I say it is a success and will definitely make it again. The recipe is below:

Ingredients:

4 cups chopped seeded cucumbers (about 4 medium)
4 cups ice cubes
1/2 cup sugar
2/3 cup fresh lime juice (2-3 large limes)
2 tsp salt

Purée or blend the chopped cucumbers in a food processor or blender until completely puréed. Strain the juice through a fine mesh sieve and make sure to remove all the juice from the pulp. If you have a juicer you could also use that to juice the cucumbers and make your work much easier.

Once you have the juice, add the rest of the ingredients and stir to combine. Let the ice melt a little to dilute the juice a bit before serving with fresh cucumber slices and a wedge of lime.

    I just found your blog. How did this drink taste? Would you make it again? I love my garden. It's small though. Two 4×8 raised beds. I am so happy with them. Tonight's dinner had three vegetables grown and harvested today. Swiss Chard, yellow summer squash, and cucumbers. I look forward to checking out your previous posts.

    Awesome! Congrats on the garden. Isn't it neat to be able to eat what you grow?! I loved the drink, but I am a cucumber addict. I thought it was very light and refreshing.
